The Challenge.
As Sushi Sushi evolved from a single Melbourne storefront to a nationwide brand, the demands on its technology infrastructure grew significantly. Each store, whether company-owned or franchised, needed reliable, future-ready systems to deliver seamless service and uphold the brand’s premium customer experience.
The challenge wasn’t just scale, it was agility. With franchise partners ranging from single-store operators to multi-site owners, Sushi Sushi needed to balance centralised control with flexible, easy-to-support tools at store level. The IT team, operating lean by design, also required smart, scalable systems that could be deployed rapidly, maintained remotely, and support an ambitious roadmap of innovation and digital engagement.
“When you say sushi, I want you to think Sushi Sushi.” says Anthony Sok, General Manager – IT at Sushi Sushi. “My goal is to drive technology first and bridge the gap with technology and customer experience and make sure that Sushi Sushi stands out for being a business who really challenges the status quo in the quick service restaurant space.”
